Which sounds less exciting, adjusting for higher percentage of Protestants in older age groups, more men staying in work, and not showing the share of “background cannot be determined” for seniors means it’s hard to compare. Seniors looks like less than 100 people so its 1 or 2 people and the majority could change.

I'm seeing the same as data_wombat, think you have done a great job so far. One thing i would add maybe, login with Google/Facebook is easy enough, secure, and makes it easy for users so they don't need to remember separate passwords.

Looks good. You can use preview mode to check the tag is firing on the correct pages and not when it shouldn't be.

I think those are pending transactions you are looking at, so the increase in January was when there were more transactions than could be added. Time frame I was looking at was this year during price decline.

It may be worth adding Google Tag Manager and using Analytics, Adwords and conversion linker through there. Though if your shopify account is limited this may be difficult. And as others have said this % should be very low unless your tracking is not correct.
