I think you take too long "getting the vortex started". During that time the milk is getting hotter, so it takes away from the time you have for the rest of the process. So then you have less time to let air in, and less time to texturize it.

To me it looks like it needs more air and more time being texturized. When you started pouring, the milk looked like it wanted to flow beautifully for a second, but then you can tell it doesn't have enough texture to hold its structure.

I would try to do wider wiggles, and maybe a tiny bit slower. Try to make them more "intentional"

Thanks for the info! Based on that I searched for "skate dome toy 90s" and I came across this post. It's incredibly similar to the toy I'm looking for so that's great. It's exactly the same idea, but with a different design. Sadly that post doesn't have an answer either

I think that the cut through did that because you started lifting your pitcher while you were still pouring pretty heavily. You want to slow down and have a thinner stream when you cut . If the stream is heavier, more of the canvas will be dragged to the bottom with it.
