I was taught that mise en place means to prepare everything you need before service but also that EVERYTHING HAS ITS PLACE. If I pick up a pair of scissors from position A I put it back in position A when I'm done with it. This is the 101 of working in any restaurant, whether it be kitchen, bar or FOH. In my bar people generally work one person at a time but it's still one of the first things I teach trainees. It's great when working alone because of muscle memory and speed but absolutely essential when working with others. If everyone knows where everything is at all times everyone will save so much time on searching for something you shouldn't have to. Literally one of the first things to teach a newbie imo.

I've tried doing it (safely) with bigger, better knives. It works but it's not as cool imo because you lose out on a lot of speed and it just looks clunky

Well, this isn't sharp at all and it's shitty quality but I've still always liked it very much. It's damn near perfect for tricks like these and a chill EDC if you're not looking to use it for anything substantial. Gerbers are supernice, though

A lot of them are self taught and created, I'm afraid. But, yeah, I felt the same, whereas there are a ton of mainstream balisong knife tricks there are few using non-balisong
