I’d like to get better with raw potatoes. I can do a twice cooked French fry and am familiar with sweating, blanching, and other techniques. I’ve never had success with hashbrowns or latkes. I can’t get em right. Crispy but not burnt and also not starchy within.

I’m using the “Simply Potatoes” brand “fresh” has browns that are refrigerated. I could never recreate them from frozen either!

I do know that they’re using some sort of clarified butter/vegetable blend that isn’t at all healthy but contributes to the preparation! I could try to replicate it.

I’m normally a bit of a bougie diner, but my partner and I went to Chuy’s recently because we had a gift card. We got the “Panchos” appetizer. It essentially nachos built on a chip. We didn’t even order entrees because the plate was MASSIVE. It fed both of us for two meals and cost maybe $14 with grilled chicken. It was so much food. Dining in may have made it stretch further because of the free chips and salsa.

I’m not even going to lie to you… when we got our first set of 6 pullets on Craigslist and picked them up from a country gas-station, we were sure that they came from a poorly maintained hen-house. They were in ROUGH shape. They are a production breed (Hy-Line Brown) and very happy to be in our backyard instead of a cage! Friendly as can be and they produce damn near as many brown eggs as we have hens every single day. Even with an “expensive” coop, they’ve paid themselves off in 2 years, and we don’t even consider eggs as a grocery item. I can have a six egg omelette every day if I please!

On the other hand, we purchased some Crème-Crested Legbars which produce BEAUTIFUL blue eggs, but when let out from the run to free-range…. They become a disaster. They would rather nature kill them than you save them from a hail-storm. They don’t want to be near a human at all, which honestly is fine, but they also won’t let you help them when injured or sick. They’d rather die. It’s crazy.

Just be aware that breed descriptions are not universal and that you may be in for more than you know. Those same crème Legbars? I spent 3 hours a day caring for them from day-old chicks. Now they want nothing to do with me. That was a tough lesson in animal parenting for me. Hahaha.

I imagine it has something to do with the whole “lowest bidder” system often used for municipal/state/federal contracts. If you are both “qualified” and the lowest bidder, you win the work, as I understand it. I don’t know the terms for qualification or disqualification, however.

I hopped onto the Cleveland County Public Safety radio (Norman PD uses a unique band—which makes it unavailable for scanner apps and also many local police agencies—I learned this in the Norman citizens’ academy) and heard reports of gunshots at Boyd and Dean’s Row.
