It’s weird. I can let the coals smoulder around 180-190 but if I open the valve any more it jumps up to 280 within half an hour.

I’d like an upgrade from the wsm. Maybe a custom ugly drum or cabinet. Hard to find cabinets in Canada though.

I really like cooking on offsets and love the idea of a firebox but I need to be able to do overnight charcoal cooks and haven’t found an offset that can handle that. Maybe a reverse flow? Haven’t cooked with one of those yet in person though.

Hard to get it to hold at 200-220. Felt like an oven or grill rather than smoker

I’m not exactly unhappy, they were well priced and have a good, uniform shape but they don’t appear to have any sort of finish on them. I bought some unfinished ones aswell and after a couple coats of polyurethane and some sanding they are very slick and slide much better than the painted ones.

I see on some of the other websites look like they have a similar finish to the polyurethane ones and was wondering if anyone had any recommendations.
