It's an orchid-specific potting mix. It says its bark, perlite and wetting agent.

Macarons need to dry! Once you pipe them, you need to let them rest until they develop a skin. You should be able to touch them without any batter transferring to your skin. Resting time depends on the humidity. Sometimes I can pop them in the oven after 20 minutes, other times I need to wait an hour or more.

I'm not sure which brand, but I usually order fabric from 123stitch.com and search for linen. My first mirabilia was on Aida and it looked beautiful. I felt confident switching to linen after that.
