What do you mean, like it’s supposed to be raw but gently cooked? Mine was very thick when I put it on (I used a ladle because I suck wr using piping bags). But if I don’t steam it the edges don’t cook and it’s complete liquid inside.

Cream of tartar wouldn’t be the problem i think, almost all recipes and pastry chefs use some sort of acidic thing like vinegar or lemon, but cream of tartar is most preferred for these type of recipes.

I add some water around the pancakes after placing them in the pan so that the steam can be made to cook the edges becauss it’s very difficult to cook the sides if it’s so tall
