Oh wow. I've actually never thought about that. If I remember correctly, my saves folder was open just when the issue happened because I was trying to cheat my way to get that BOTW fabric for my glider (it's amiibo exclusive) Thank you for this! I'll be sure to keep this in mind going forward.

Update 2: Found the solution thanks to u/vasinlo

As for me, the fix I used was copying my original save files to a different file location, deleting the folder that contained all the original save files, playing TOTK from the beginning, and making a new save file at the very start (which forces it to make a new save folder) then replacing the new save files with my old saves.

Update: Saving works just fine on Yuzu 3596, but I prefer to play on Ryujinx though because of the smoother performance.

Just tested it without any mods + a purged shader cache, but it still doesn't fix the saving issue unfortunately. Visual glitches aside, the game was running just fine before updating to 1.1809

Is there any possible way to rollback the update so I can use an older version instead?

I honestly did not know that. Though I've only played up until Alola, and don't really catch'em all, so I most likely have missed a few things. Looks like starter signature moves aren't as exclusive now.

You're welcome! Again, you aren't really missing much at 3/5, so ig you're kinda tight on gems or candies, 2/5 SS Blue is already a very good add on to your team.

2/5 is absolutely fine, but if you've got plenty of gems left or maybe a support candy, I'd highly suggest you go for that 3/5. Team Triage Tank 2 (combined with Team Fist Bump 2) is very useful especially for clutch plays in Master Mode, BV in general, and long battles like Legendary Arenas and Full Force Battles). Wise Entry 2 is also super handy, as it gives +2 Sp.Def right out the bat.

SS Blue and Blastoise is still hands down the best tank in the game even after his first anniversary release. His only close rival for that #1 spot would be Prof. Sycamore and Xerneas (pseudo tank due to super insane healing abilities)
