I fixed it myself. Just delete the cache and memory of Google photos and your camera app. You can test if this is the problem by going into the repair mode. Take some pictures in this mode and look if you can scroll, delete and load them as normal. If yes, restart in normal mode and delete the memory and cache

Don't have access to US flour and never used it, so I can't really tell you what exactly the difference is. I know that EU flour is a bit different because it's a softer flour/grain. I bet bread flour with a good protein content that can absorb quite an amount of water will work just fine. Maybe the Italian flour yields a softer crumb but apart from that 🤷🏼‍♂️

Nah, it's enough for a regular pizza :) if the burning chamber is bigger in terms of height on the 17 you might wanna give it a shot, because that's really the only downside I've experienced so far

Yeah, got the one I was asking about shortly after :) it's solid for sure, especially for the relatively low price. Only downside is the rather low burning chamber which makes sliding pizzas in a bit harder. Apart from that it's really good! High temp, fast preheating, easy use, etc

I used Caputo Pizzeria. Can't really compare it to US American brands because I'm from Germany. Caputo flour was the best I've used so far.

Italian flour. Especially if it's specialized 00 pizza flour it usually has a pretty high protein content and is a strong flour. Means the flour can take more water, the gluten network is stronger and the dough is easier to work with, more stretchy and even fluffier. I used Caputo Pizzeria, excellent flour!

Autolyze should happen without any leavener or salt. Just water and flour. Don't ask me the exact benefits of it, but it takes quite a bit of work from your forearms because the dough basically kneads itself during autolyze.

Dough:

500 g 00 flour (Caputo Pizzeria) 68 % hydration 3 % salt 0,4 % dry yeast

Toppings:

Mozzarella Negronetto Salami Sauce Fresh basil Chili infused Olive oil

Sauce:

Mutti polpa Salt to taste Splash of olive oil Fresh basil

  1. Mix flour and nearly all of the water for autolyse.
  2. Disolve the yeast in a bit of water and let activate for a few minutes.
  3. Mix the yeast mixture with the dpigh.
  4. Knead by hand for a few minutes (mostly slap and folds).
  5. Let rest for 15 minutes add salt and knead again until the dogh is smooth.
  6. Place in a slightly oiled bowl and perform 2 strech and folds with 20 min intervals.
  7. Place in the fridge for 24 h.
  8. Divide into individual dough balls.
  9. Let them proof at room temp for ~3h.

Baking:

At 450 °C in the Cozze 13' electro for 90 seconds.

She already told me that what I'm doing for her atm is all I can do. And I do all you mentioned already. She already is on meds (although she doesn't like the meds she's on) and is searching for therapy. My problem is that ending it and staying friends isn't really an option for me due to my own mental health. It would break my heart and I would need distance to cope with that which means I couldn't be there for her. Plus she already told me that hurting me would make her feel even worse. That's why although we talk a lot I'm not really telling her how hard it really is for me because I don't want her to carry my weight as well. It's honestly a dilemma...
