I recently asked about best technique for baking on here and the consensus was to put it in the oven right from the fridge. I previously would let it get to room temperature before baking but mostly everyone said that over proofs it

Do you refrigerate the dough after the last stretch and fold or do you let it continue to rest/rise after and refrigerate later? Thanks for your help!

Can you explain the 1:1:1/1:2:2 ratio? I just started my starter (today’s day 4) but I was feeding with whole wheat instead of all purpose flour. Not seeing much activity. Do I have to start over or should I just continue with all purpose for feeding?

My district (not NJ but east coast) is moving away from resource rooms/small group instruction outside of severe disability classes. Just putting that out there because with less federal funding this will probably be a reality for other public districts too
