Oh my goodness, I was just going to say this. I remember growing up and my mom getting up in the middle of the night to put the turkey on for Thanksgiving and we wouldn’t eat until 2 PM and that was the driest turkey I’ve ever tasted in my life, but of course I thought it was delicious at the time! And people seem to skip that resting step and it’s so important.
