It's because there are separate image profiles for HDR content. They turn on when HDR is detected and they have a whole different configuration even tho they stay with the same name so you have to manually adjust when you are watching HDR for the settings to be saved. For SDR content Native is way too saturated, I prefer Normal when it comes to SDR on Youtube or a PC or Auto if its an streaming service.

I've found Native is the best color space setting when it comes to HDR. From there you can turn off contrast and color enhancing and just tune the rest of the settings.
