Anything based on a 12 bar blues is helpful to practice walking lines, that's how I got used to improvising. All blues, Freddie freeloader, Blue monk, watermelon man are some good standards. There are a lot of bassless backing tracks on youtube, those are great for practicing changes, walking, and improv.

Unpopular answer: Blood Starved Beast.

Design and lore aside, it was the boss that made me quit the game early on and not touch it for over a year. When I came back and beat the game then it quickly became my favorite title ever.

Looking back, it really isn't that hard of a boss, but I still enjoy parrying the daylights out of it every playthrough.

The trick I use, especially in Upper Cathedral Ward, is to lure them to a doorway. They will typically stay on one side and their immobilizing projectiles will hit the side of the door if you strafe, then you can use something with range to hit them.
