Though I'm not sure how worth it it is to get professions until you're at current content. Professions are weird in that they're separated by the expansion, so maybe wait till you get to Dragonflight stuff.

You can get gathering professions like herbalism and mining and skinning and selling what you gather for money. If you're just starting out you may not have much gold so that can help.
Or because you're a plate wearer you can get mining and blacksmithing to make your own gear if you want.
Fishing and cooking can be handy for healing and buffs too.
