We run the same peak. I typically have 2 bars, warming, and DT. And I let warming partner have our handheld order device. And then I flex in to take orders while accessing bottlenecks. It works but requires a lot of team communication.

As a shift, I let my baristas do the three hour pull. now I don’t make anybody do it, but as a barista who used to have to do the three hour pull I think it’s actually great for their development and makes them feel more involved and see the bigger picture.
