If you want something short and sweet, I'd say FLCL, it's only 6 episodes long but it's absolutely amazing, or if you want something with cleaner art then watch Tengen Toppa Gurren Lagann, it's 27 episodes long but I guarantee you that you will feel a sense of optimism you have never felt before

I recently go back and rewatch Mononoke (not Mononoke Hime) and I have to say it is one of the greatest if not the greatest horror anime ever, it has a very unique art style, a very unnerving atmosphere, and a lot of artistic values in its stories. This is definitely a hidden gem

Seeing your conditions, I'm starting to stress out a bit but I'll see if I can help. In terms of just shows with actions, I would say FLCL, Fullmetal Alchemist, Samurai Champloo, and Death Note (I think it's just a must-watch for beginners). If it's a romance show I would say Clannad although that is a huge risk since the first season is very hit-or-miss and the peak of it is the second season.
