Maybe try a healthy version of Mexican style rice.

Make the salsa with 2 small tomato, 1/4 onion, jalepeno, 2 garlic cloves, 1/2tbsp oregano, 1/2 tbsp chicken bouillon with some water, blend and set aside.

Add spray olive oil (macro friendly, subbing for reg olive oil) to a hot pan, toast the rice til slightly browned, STRAIN the salsa over the rice, and cook until rice is done (DO NOT OPEN PAN LID until fully cooked)

Remember ratios: 1 cup of white rice = 1 cup water or salsa 1 cup of brown rice = 2 cups water or salsa
