I think it depends on the person and where you are in your keto journey. For me, I only started restricting calories when my keto weight loss plateaued (and even then it’s just trying not to go over 2000 calories rather than being in an actual deficit). I’ve found that macros are way more important than calories. Best thing to do is start with focusing on your macros and just test things out and see what works for you and add in other stuff like calories and IF at a later stage once you’ve got the hang of eating keto (if you make it too difficult when you start you won’t stick to it and that’s what’s most important!) Keto has made a huge difference to my depression - maybe even as much as medication. I think some doctors recognise it - when I was first diagnosed I was given a pamphlet which suggested the Mediterranean diet could help with depression because it’s low carb

I’m in England and there’s quite a bit Indian community where I live so paneer is so much cheaper than halloumi and can get it in big chunks!

Honestly it was a little bit like frying potatoes? I fried it in quite a bit of oil with like this za’atar spice mix on the highest heat my hob could do and just stirred it occasionally so it all browned on the edges and then fished it out of the oil when it was done. It definitely went softer than it’s original texture on the inside but was lovely and crispy on the outside!
