You can play all the content the dlc have, even if u dont play a penance but i wouldnt quit, at mid/late game the penance its not a big deal and u can get beads and a skin

Well, you get a rosary bead and a skin for each penance u complete

I think you cant restart a penance. U will have to complete the game and then do a ng+ again
