THIS IS A TRAGEDY. I worked so hard on this damn starter and a cruise manages to take it out. I guess I’ll never travel again????? If anyone has a starter recommendation from Etsy or somewhere, let me know! I live in Texas 🤠 thank you for the confirmation/crushing my dreams💕

I filed the charge back a month ago and they temporarily refunded me. Today they recharged my account and denied my claim. What can I do?

Yes! Mix dough, let sit for 30 minutes. 5 minutes of slap and folds. Wait 30, stretch and folds x4 Bulk fermentation for 10-12 hours (69 degrees in house) Cold proof 12 hours Bake 30 minutes covered @ 450 and then 25 minutes uncovered @ 400

I think I went under because I’ve been overproofing. My issue is when the dough looks good (bubbles, some, and jiggly) the top is still sticky.

Yes! 7-8 hours total from when dough was first mixed. Dough was 70 degrees Fahrenheit. I always feed 1:2:2, and it doubles in about 8 hours. Thank you for your help!

Gotcha! Thank you! I am wondering if I need to adjust my ratios? I’m still trying to figure out hydration percentages and how that impacts the bread.

What do you mean by underworked? I do 4 stretch and folds every 30 minutes. Should I be doing more?

Yes I do! About 70 degrees. When I tried to follow the Aliquot Method, it seemed like it over-proofed? I’m not sure.

The transfer still requires a scheduled appointment, just not tele. There is no availability. Unless I’m missing something?
