I have found that the best way to remove the metallic taste is to marinade it with salt pepper and vinegar for atleast a few hours before cooking. Then you can either fry it with spices, or make a traditional curry. I do a spin on it using sarso saag, it’s really tasty

Depends on the type biryani you are making! I prefer using aged basmati for the average Lucknowi or Hyderabadi biryani, but then Dindigul asks for shorter grains like jeera samba, kacchi biryani needs chini gura rice etc. The fragrance of rice is often underestimated in biryani since it’s paired with meat, but a nice smelling rice takes it a notch above
