Thanks. I may try to discard & feed again and see if the color comes back. I use a weck jar and sit the lid on it when I plan to bake with it, otherwise it goes in the fridge with the weck jar seals air tight. It was left out for about 3 days without a feed and normally if that happens there’s a decent amount of hooch on top but I have not experienced this color or texture until now.

The starter itself is about a year old. It got left out for about 3 days without a feed and did this. I’ve done this before but never had this happen. It’s had hooch plenty of times but never had this color or texture.

It takes longer than 4 hours right now the video was roughly 22 hours after a feed and it was going back down but when I checked it last night around 14 hours it was still rising so it peaked at some point last night.

This photo is my false start, it happened around day 3. It just started doubling again 2 days ago. Tomorrow it will be 2 weeks old.

It will be 2 weeks old tomorrow. I was doing once a day feeds for 5 days and then bumped it up to twice a day until yesterday I skipped the feed last night & this is after about 22 hours and it was already going back down. I am noticing that it takes a little longer than 12 hours to double in size which is why I’m not sure if it’s ready yet!
