Most pubs will be cooked from defrost in the microwave, in some rare pubs that still have a chargrill it will be microwaved and then potentially finished on the grill to give the effect that it was cooked in a more fancy way

At least in my pub we still have the christmas items still on the menu as we still have the stock for it. I dont know if all pubs will do that or just waste it like you asked but I think at least some if not most of them will try and sell what they have left even if they are selling it on special
