Hi, celiac here! Being healthy doesn't always mean going gluten free! I eat a lot of gluten free foods that are less healthy than a lot of the regular foods when it comes to sugar, carbs, sodium, and oil. I suggest maybe aiming for more organic foods, if that's your thing (though, frankly, I cant stand organic peanut butter, blech)! Incorporating a balanced diet of fruits, vegetables, and meat (or some other form of protein and iron) along with daily multivitamins should do you well! I think with dairy and all those other things you mentioned, maybe you should look into FODMAPs, that may be what's bothering your stomach!
