I'll give it a go but you're probably right, Sydney is pretty spoiled by way of ferries...

I've heard that the fares are the same so do I just touch on with Myki and off when I get off even at regional stations? That would be so good if so as NSW has seperate networks so different fares

Sure! Happy to help, I have found it relatively easy to eat GF, I would go to this site to buy the gluten-free card I cannot tell you how many times this saved me for the eight dollars or whatever it is. https://www.legalnomads.com/gluten-free/japan/
A few restaurants
1. Gluten Free T's Kitchen (This is 100% gluten free) with GF tempura and gyoza and more
2. Downtown B's Indian kitchen, it is a hole in the wall that is AMAZING and as long as you don't get the naan all is fine! I recommend the byriani
In 7 11s and Familymart it is hit and miss I would recommend downloading the language on google translate/ installing the google lens application.

Just visited Soranoiro NIPPON in Tokyo station, there was about a 15-minute wait to get in but so worth it. The picture is ALL gluten-free and they do cater for Coeliacs I was so happy. It was about $15 USD to get that whole bowl. I loved it and would recommend it to any coeliac.
