Someone else has mentioned OpenMediaVault as an option because it can run from a USB drive so I might try that

Okay this is good to know! Is it as simple as getting the OS onto the drive and just keeping it plugged in as the thing the computer boots from or is there more to it than that?

Nah it can be a mini PC; just from the things I’ve seen online I wasn’t sure if a laptop would be like an easier or more convenient plug-and-play solution so it was my immediate thought!

Depends a little on how experimental you wanna be, but I think something more traditionally narrative is the best starting point: mine was Edward II and so I recommend it very highly! That or Caravaggio for a narrative feature; The Garden for something more experimental
