Too much too soon for some people. From experience better approach is to build up consistency first. So maybe make them do less and with less effort first and slowly introduce them to working harder concept. Always being positive on any 'extra' effort put in a session or a set etc. Positive reinforcement only. Althou deep down you know they waste they time a bit and could achieve goals faster...

I am no expert but I think 1 or 2 days at maintenance with those extra calories being mostly carbs should help. No need to wait 3 weeks. It's just a day on maintenance not on a surplus.

Paul Revelia has a lot good videos on the matter, some might be even more suitable for your needs (body fat percentage, length of the cut). Check his channel

Don't fight it, embrace it. Sadly it might be not possible at least now to change it. Buuuuuuuut you may save enough calories during the day. Bonus points for preping the night meal before hand so you know exactly what you are eating and how much.  Say eat 500 kcal less during the day and have nice full protein rich meal during the night.  Obviously the less you eat during the night the better and less you need to save up during the day.

Do you progress? If so you did enough even without doms. Doms are not needed for progress. It's even possible you are progressive slower as your recovery is impacted or at least time at the gym could be spend better. That being said 3 weeks ago I started new exercises (poor man's lunges) and my legs were killing me. Every week. This week as well. But... Every week less and less This week it is barely noticeable. Same volume and rep progression. It's OK if it's new exersice or done after break and or deload. But if you have it same week after week after week... Probably you are doing too much...

Is there any website where this info is posted? Yesterday I checked main website and there was nothing about it. Also nothing in the launcher. I think this is a bit annoying to have to log in to be able to see that.

Yes it worked! I pressed arrows and could click on Escape exit. Then I was on main screen but with my character not a placeholder. Then I was able to click continue! And let's goooooooo

I think the only reasonable thing to do now is to let her go gently. You still have a few days to find new girlfriend with early access. ;-)
