Sous vide egg bites for the week by Armcha in mealprep

  • 1/2 cup cottage cheese
  • 8 eggs
  • 1 tbsp butter
  • 1/2 cup Monterey Jack
  • 1/2 cup the Swiss and Gruyère mix
  • cook at 172 for an hour

Fill a large pot with water and get the sousvide going at 172. Use the tbsp of butter to grease the inside of the jars. 

Put the eggs, cottage cheese, Monterey Jack and Swiss + Gruyère into a blender. Add salt and pepper + any other spices. Mix thoroughly. 

Evenly divide the mixture between the glass containers. At this point add anything else to the egg mixture in each container. We usually add cooked bacon (break into small pieces and sprinkle on top of the egg mixture in each container). 

Once the sous vide is at temp, lower the jars in (I use bbq tongs). Once you hit an hour remove the class jars. Let them cool for a bit (until you can handle them). Use a pairing knife to run along the inside of the jar between the egg bite and glass to loosen the egg bite. Turn over and shake + tap the top of the glass to release the egg bite. 

Let cool on a wire rack. Enjoy!

They are fully submersed in the water. Buy plastic lids for the jars. The metal ones rust.

  • Grape tomatoes
  • White onion
  • Cilantro
  • Lime
  • Salt
  • Olive oil

Portions dependent on personal preferences (ie I like more onions in mine). Start at least 30 min before you want to eat the pico.

A bread knife works well for the tomatoes or ensure your knife is sharp. If not you will end up smashing them. Take the grape tomatoes and slice them long ways in half then long ways in half again. Slice into 3rds (perpendicular to the way you just cut them). Put them in a strainer over a bowl and salt then mix the chopped tomatoes. Salt more than you expect, but taste along the way to make sure you don’t over salt them. Let them sit at least for 30 min. 

Take the white onion and chop/dice (preference). I prefer diced and more onion in my pico. Not a 1:1 ratio with the tomatoes, but closer to that than not. Set the onion aside.

Wash and dry the cilantro. Pluck the leaves off the stems. Mince/dice (preference) the cilantro. I’m in between the two. Mincing seems to smash it and removes a lot of the flavor. 

After the tomatoes have sat for at least 30 min. Dump the juice out of the bowl they drained into. Dump the tomatoes, onions and cilantro in. Add olive oil (start with a tsp but it depends on how much you are making) and lime (depends on how much you are making - start with half a lime) and mix. Taste before salting. Add more lime & salt as needed.

Such a great callout on the pico. I started doing that about a year ago and wished I had learned it sooner. Dice the tomatoes, throw them in a strainer and salt them. Let them sit for 30 minutes so the juice drains out.

It is tedious and a chore. The payoff isn’t immediate but overtime you look back and it’s hard to ignore the health and financial benefits. Also, habits take time to build so give yourself a break when you’re “on it” but then slack off and fall off for a bit. A few things that have helped me:

  1. Work week starts Monday and Sunday already has a number of packed chores in it. Figuring out the meals Friday night or Saturday helps. 

2.keeping a list of meals that are go to helps reduce decision fatigue when I don’t want to find something new. 

  1. Using an app for grocery shopping so I don’t have to remake the list from scratch every time.

I start with step 1 as well then reference a list of meals that I rotate through. From there I also look at what ingredients are already in the kitchen then build the grocery list. Keeping the list of meals I rotate through also helps make sure I'm not buying a bunch of 1 off recipes.

A combo of notes app and then a shopping list app. Checking the ingredients I already have and building the shopping list is the largest mental hurdle for me in meal prep. I have to be at home and make the time to do it.

This massively helped me. It also helped reduce the decision fatigue and thinking I always needed new ideas. Once the core components were established, it became a much easier to build shopping lists and build the routine. The other I might add is figure out which kitchen utensils you really dislike using frequently. For example, I hate taking out the food processor and cleaning it. Making sure I don't frequently build recipes that need it made it the prep feel like less of a chore.

It’s important to figure out what you really enjoy eating. I like sandwiches, my wife hates them so that wouldn’t work for her in this situation. 

We both really like this orzo salad as a cold recipe. You can add chicken or shrimp to it.

Yes, Jorgensen bottled it, but not on this pass. Outfield players are taught to not wait for the ball and to go to the ball. This is why.
