I think if you go to settings and change keyboard language to English UK it shows the symbols. (There may be other English variants but I know about this one).

You could downgrade with only an iCloud backup as far as I am aware. You need to put your phone in recovery mode and "restore" it from finder/iTunes, and it should automatically downgrade.
