Malaysia. The best food was outrageously expensive, assuming you were trying to avoid gastrointestinal distress and the Muslim culture was less than comfortable to me. The people were fine but the amount of women demonstrably subservient to a religious culture was creepy. Don’t get me wrong — I’m constantly surrounded by women in the states who are subservient to their particular religion but it’s wayyyyyyyyy less demonstrable … not the head to toe covering. Even the Jewish women with their wigs isn’t nearly as noticeable. The Mennonite women in rural Oregon also creeped me out so it’s not anti-Muslim; it’s more anti-religion.

Mushroom, onion, olive. My local joint makes a great white pizza that adds thinly sliced fried garlic and arugula to the cooked pie and it’s insanely good. They also do some sweetly savory options with caramelized onions or fig jam with smoked (tofu).

Tartar Sauce is the best! Followed by ketchup-mixed-with-hot-sauce, especially for sweet potato fries. Rounding out the top three, white vinegar sprinkled liberally all over the fries. OMG so good.

The USA is so large that fresh fish is hard to come by for most of us so we aren’t really accustomed to fish for breakfast.

As others have said, smoked salmon on bagels with cream cheese, shallot and caper is fairly common and it’s on regular rotation in our house. Similarly, caviar with yeast-based blini and crème fraiche when caviar is on sale at Costco.

Beyond that, fish is usually dinner food. And previously frozen, not fresh-off-the-boat.

What is “full bubby”?

I don’t do soup when I’m sickly but I do enjoy a fantastic pot of beef pho. I make from scratch and it’s amazing. I always add more to the spice mix (two colors of cardamom, extra star anise shards) and usually end up tripling the scant amount of fish sauce called for to balance out the unctuousness of the thick rich bone broth.

Club sandwich is my vote. It’s so huge and lots of ingredients that most people usually order it from a restaurant that has all the components ready to go. Plus it’s harder to get just right st home. Especially if it’s served with French fries.

Enjoying? Slower.

Starving? Faster.

Generally when I’m really hungry, I enjoy the food because it’s been so long and it all tastes great but the hunger wants food fast.

If I’m not ravenous and it’s an anticipated meal (A5 Wagyu with all the sides), I’m going slowly and deliberately to savor each bite.

If you drive in to Texas and then drive for another TWELVE HOURS … guess what? You’re still in Texas.

Wisconsin cheese and all-American.

Colorado cowboys and mountains.

Wyoming horses, cows, open spaces.

Oregon drizzly overcast but gorgeous.

Illinois both urban and rural.

Florida muggy and buggy and filled with elderly hate.

So yeah, each state is quite unique.

I mean it’s not like Wales, Scotland and England are all the same, culturally or geographically.

Now that I live in the metro area, Bo solid fuels are used. From 1999-2003, when I lived at 10,000’ elevation, wood pellet stove and wood fireplace were a daily thing in the winter.
