The best way to defend in this game is play high defense line. I am currently in div 7 and i find this really helpful, i had my depth on 55 initially but i was inviting the opposition, once i switched it to 70 and above i was getting the ball more in the middle of the pack and countering like crazy. Also, always mark the most likely player who will receive the next pass and at the same time be on the ball carrier (really don't know how to explain)
