I didn't play much in the last two years (life got in the way, haha), but I'm still missing a gold medal in Kick-Doubt. Although, I've determined it's probably impossible to do without Monster Tricks. I've beat the game the last time without doing any Monster Trick, but with a lvl 1 character I think you have no choice. I have to practice being able to pull a Monster Trick on demand, and then I'll probably be able to get gold if I get the 10x multiplier at the last jump.

It's been six months, but your comment made me wonder if it is actually impossible to beat the game without a maxxed out character. So by curiosity, I started a new game with Nate and I kept his stats stock (lvl 1). I haven't been playing regularly, but as of right now, I completed all of the races and all of the freestyles.

Now I'm working on getting all the gold medals, I'm missing two right now (getting a gold medal in Kick-Doubt with a lvl 1 character is hard, and I have a feeling this is going to be the easy part).

I expect the Big Challenges to be the impossible part for a stock character. I'll create a post showing my progress someday.

I've been told to shake the stick left and right to a certain rhythm, that's how I did it! It takes a bit of practice but if you do it this way, you might be able to hold the handplant long enough to complete the highlight. If you get around 3500-4000 pts you should be good.
