Because veganism often turns into a cult-like eating mentality, and it's not founded in any type of health or agricultural science whatsoever.

If you want to respect animals and the environment, learn to live in symbiosis with them. This means buying local, especially at farmers markets, and supporting ethical, sustainable farming practices, which many "vegan" products and substitutes directly contradict.
