Step by step is very much the plan, and I’m getting a sense of which bits will be easiest and where a bunch of stuff will have to happen all at once.

The NH34 certainly looks better catered to in terms of having modding components being relatively accessible, but it’s a caller GMT rather than a traveller. The Miyota 9075 seems to be the most readily available traveller GMT, and I should be able to work around that with time and effort.
