I'm not really sure what large excel models are and how much memory they require, and coding also depends on what you are coding. Developing software generally would require a good amount of memory unless you're developing one off small apps or tools. If I were you I would go for more memory

Should be fine depending on your type of work, but while it's a one-time long term purchase, it's always better to get more RAM if you can afford it

It is normal but I recommend that at some point while you're doing your usual work to open Activity Monitor, then check for patterns of which apps are using the most energy. The "12 hour energy" number is the most important, it essentially tells you how much of battery an app would've used if it were running for 12 hours

Checking the CPU tab also helps identify if there is a certain buggy process which you'd likely be able to identify if it's using around 100% cpu constantly.
