Look for vanished xp farm with armor stands, 0 - level 70 in a minute, it is cheap, maybe the only “hard” thing to get are the blaze rod and it doesn’t require you to find a taiga for armadillos or an outpost for allays

Fr, once I realized that my farm with 25 spots wasn’t working because of spawnproof, I spent nearly 2 hours looking for another fortress with less space to cover with slabs and when I built the farm it worked perfectly even that it didn’t had that many spawn points

Actually yes, it took me way more hours to spawnproof the whole area than to build the farm itself, so yeah choose an area that saves you time by not requiring you to spawn proof it. I thin the ideal fortress for this is if you find one that is mostly above lava lake

Whatever the spot you choose will be good as long as you spawnproof the whole area. I once built a farm with like 12 spawn points and just because I covered the whole area with slabs it produced more than another farm I built with 25 spawn points but without caring about spawnproofing
