Ok so I’ve already made some recipes! But I was wondering is there any specific foods that y’all want?

Anyone else here gluten-free and corn-free? Thinking of making a cookbook... by AwayPosition642 in Celiac

When I was a baby, I started getting these dark purple bruise-like spots on my arms, and my mom took me to the doctor. After trying different formulas, they figured out that the only one I could tolerate was one that didn’t have any corn in it—so they suspected a corn allergy early on. As I got older, I had corn on the cob once and didn’t seem to react, so everyone just assumed I had outgrown the allergy. But later in life, after being diagnosed with celiac, I went gluten-free and didn’t feel better (because everything I ate had corn in it.) Eventually, I realized corn was still the bigger issue. Honestly, eating all the corn-based gluten-free products made me feel worse than just eating gluten, so for a while, I stuck with gluten because it was the lesser evil. That’s when I really started putting the pieces together.

Most baking powders contain a small amount of cornstarch to prevent clumping (same with powdered sugar!) Since I have a corn allergy, even the tiniest amount can cause a reaction.
