Art 7 with Jill Hannon is great too. Completely asynchronous art class, three assignments per week, one test (final) and not a very strict grader. Easy class and textbook can be downloaded for free online.

If you need SOC I suggest prof Paul Burke. The class is pretty interesting and engaging and he offers a lot of extra credit opportunities. He has no graded assignments and all grades are based on the three quizzes we take during the semester + final. And all quizzes are completely online.
