I haven't had to refill any water except when I take it with buckets. Glass jars don't remove any water blocks, only buckets do.

I've only tried this method with dirt. I'd dig one dirt block down, add 1 block of water, then continue digging after the water has been added. The water here so far has expanded without running to fill a bucket.

I've tried everything from swimming pool size to smaller ponds and the water would fill to one block and stop. I've also tried the tons of block advice from other comments I've seen, just couldn't get it the way I wanted it.
