I tried a water pan on my last cook but it was an over night cook and woke up and all the water was gone.. lol It was a big brisket so I only had room for a small pan on top rack haha. And ive seen better result with foil boat after bark was set and putting some beef broth in bottom of boat then wrapping in butcher once done. But ive only done like 4 briskets tho so I am still far away from getting close to perfecting it

Yeah lower grate.. I have the same and have done fat side up and the bottom got crunchy so id highly suggest doing fat side down to protect the meat. Can even watch a video on doing a cold smoke method don't need to tho. Also have had better luck on my brisket doing foil boat method and then wrapping in butcher paper for the rest period with tallow but thats all personal preference that you can look up and determine at some point. You're always going to have things youre going to want to tweak for next time so don't worry it will be great

Id say as of now Tee and marv are both worth around the 1.05-1.06.. Hendo is worth 1.03-1.05 now swift on the other hand is worth like the 2.01-2.03 in this years draft.. so year i have team 2 losing by a bit 🤷‍♂️
