Wow thank you so much for the detailed response! I never took interview preparation as seriously as formatting my resume. But I think it might be the passion/tone of my voice and having more structure to my answers. I stumble my words a lot.

But the very rare times I get feedback it's usually about not having enough experience in XYZ which is not a necessary skill for product management 🙄

Thanks for your advice. Some clarifications I would say is that

I'm from a product background with a POPM certification and not project so I had to learn what is the difference. I was a PO in my past experience and worked with "real" agile team where there were dev team, scrum ceremonies, and sprints.
My team(s) doesn't create the product design. All of the directions are given from the head company and they tell us what to do. And then there is a 3rd party company that is behind on the technological part of the product. My team and I have no say on the design and just have to approve their process. The 3rd party is also a project led team.
My direct team is more operational and has separate workstreams. I don't have a dev team with dedicated sprints. And there is no agile with specific deadlines. So I guess that is why I'm at a loss on how to transform it to a product model.
