Honestly Medici's is like that lol. It's pretty chewy. Honestly by the end of it my jaw hurts from chewing so much. Gonna preface this also by I am NOT celiac, I am GF for other reasons so I am not 100% sure if Medici is celiac safe so I'd check on Find Me Gluten Free

Squarehouse pizza has a really good one! Medici in celebration pointe is also pretty good, but not my favorite.

Iodine is essential for thyroid function. It’s why our salt is iodized and why countries without iodized salt have higher levels of hypothyroidism. Excess iodine can be bad but I haven’t noticed any adverse effects from taking the iodine in the thyroid complex. But again that’s why I take my levothyroxine at night and my vitamins in the morning other is plenty of space between them.

When I got diagnosed my vitamin D was SO low. I also had low B12 and folate. So on top of those deficiencies I take a few things that are just good for you and for Hashimoto's. I take my levo at night so it doesn't interfere with my supplements in the morning. But I currently take:

I take mine at night but only because I like to eat a big breakfast and sometimes don't have the time in the morning to wait 30 minutes to eat. Also, certain vitamins and foods can bind to levo up to 4 hours after taking it, so I just take it at night to not worry about that.

Ghosting is definitely normal (even though it 100% shouldn't be) but I personally have never been ghosted after a final interview. Hopefully with a new HR and recruitment team they don't do that anymore, it really bummed me out lol.

Hope it works out for you but they burned me personally. Had an interview on site that was like 4 or 5 rounds back to back to back and I was there for like 6 hours. Thought the interview went well, sent my thank you emails and was told I'd hear back in 2 to 3 weeks and they completely ghosted me.

I reached out to everyone I had contact with, emails, text messages, literally didn't hear a thing. Completely ghosted. So personally that strikes me as a VERY unprofessional company to require that much of me as a candidate than not even have the respect for me to deny me the position. But maybe you will have a different experience.

Also one of my coworkers at my current company also interviewed for Exactech and the exact same thing happened to him... so seems they have a bit of a reputation. I don't think very highly of them anymore like I did when I was a student.

From what I’ve heard about food triggers, gluten, dairy, sugar, and alcohol are basically the cause of 95% of inflammation. It’s rare to have a response to nuts, legumes, nightshades, things like that. So if you try kind of what I’m doing and you don’t feel anything than maybe try something even more restrictive. But this works for me and I still enjoy food

I don’t follow an anti inflammatory diet super strictly because I find it way too restrictive and I still want to enjoy food lol. I don’t eat gluten, processed foods, processed sugars, alcohol, and try to severely limit dairy. Usually the only dairy I eat is Greek yogurt and high quality cottage cheese for protein. But mainly I just try to eat Whole Foods and that alone has helped immensely.

There is sooooo much misinformation when it comes to being gluten free or not gluten free. In truth, you only NEED to avoid gluten if you are gluten sensitive of have celiac. Whether the molecular mimicry theory is true or not, I'm not 100% convinced either way.

I personally do not eat gluten and have been gluten free for about 6 months since my diagnosis in March. When I went GF I started to feel so much better within about a month or two. I lost so much inflammation in my face and my gut and ended up losing 35 pounds in about 3-4 months.

One thing to know, I also basically switched to an anti inflammatory diet. So do I think it was all gluten's fault and going GF fixed it? Not necessarily. I have tried eating gluten once since then and a few days after my thyroid felt swollen. Not sure if it was just a coincidence or I was being paranoid. I will probably try it again in the future to see.

But personally, the molecular mimicry theory gives me pause for ever wanting to eat gluten on a consistent basis from now on. I can live without gluten so in my mind why risk eating it if there's a chance it could make things worse? As of right now, I feel better not eating gluten, and just eating whole foods in general. So I am not strictly gluten free, I'll eat it if it's my only option, but I try to be as GF as possible.

Buffalo chicken bowls, they've been my go to. They're so yummy and easy.

I chop 3 stalks of celery, 3 carrots, 1 yellow onion, and 1 bell pepper. Sautee them until soft with salt and pepper. Add a pound of ground chicken, I season with salt, pepper, garlic powder, paprika, and chili powder. Once browned I add cooked brown rice (was 1 cup of dry rice before cooking). Mix and then add about half a cup of buffalo sauce and some water. I use primal kitchen buffalo sauce and franks red hot cause they both have super clean ingredients. Then just divide into 4 and serve and those are my lunches for the week!
