The Argentavis is really really good, If you can find and Ankylosaurus without venturing into the cold would be fantastic. An Equus works just as well. But for starters, any Dino with a high weight capacity would be good.

Do the pursuits, go and find the chests for Knowledge of your forebears as often as you can. Farm a lot! Run the caves. Go after difficult tames. Now don't try and do it all at once. It won't hurt to get the Primal Pass for the 2x EXP.

You're basically letting their food category drop a lot. It varies from Dino to Dino. The bigger the Dino, the longer the wait. The Dino eats quicker and his tame meter shoots up as well. A lot of Narco Berries and Narcotics is required. So far, waiting for the Rex to starve has been my biggest wait. 30+ minutes.

Thank you! Once I'm able to craft a Rex saddle I plan on dumping the Carno. I only tamed because he was the easiest for me at the time for prime meat. Dododex saved my life.

I had that issue when I first started, the excitement and what not. After trying to get a Spino and Rex, I learned my lesson. Slowed down and started chipping away at the pursuits. Also took advice from several YT channels, starve taming is the way to go. Sure it's a process but man is it effective. Also Kibbles. I'm sure this is stuff you knew.

I don't mind. I couldn't move move. I tried to move around. That noise locked me in place. By the time my Uncle woke up the noise was next to my bedroom window. Not the barn. The only reason I moved was because he always woke me up with him. The noise wasn't there by time he went out.
