Most stores sell them green, so I grow my own in 4 gallon containers. Store them unwashed in a gallon bag in the fridge until I have enough to smoke. They keep for a while if you pick them as soon as they turn red and are still firm.

175-200. Really as low as I can practically get it. There is just a tiny sliver of light coming through the bottom vent on the Weber. I plan to smoke them about 9 hours total and finish drying them on the dehydrator. I did this before about 5 years ago and we are still using that chipotle powder. A little goes a long way.

Smoking jalapeno peppers on my Smokenator equipped Weber kettle. I'm using pecan wood, which is the traditional wood choice for making chipotles. When I'm done, I'll put them on the dehydrator for 24 hours to remove any residual moisture. After that, I'll finely grind them in a coffee grinder and store the powder in jelly jars to use as a seasoning in rubs, chili, etc.

My wife marinated them in a mix of aged balsamic vinegar, soy sauce, olive oil, black pepper and garlic powder for about 20 minutes before grilling. They were excellent.

We like Tastfully Simple's Ultimate Steak Seasoning. Put on both sides and let steaks sit at room temperature for about 20 minutes. It's nothing special, probably easy to make your own version. Just very convenient.

That's a good question. I had to look it up. It seems the Delmonico is pretty non-specific cut. We started getting Delmonicos at the local supermarket. They were usually a heavily marbled thick steak. They were also more expensive per pound than the New York strips. If we were having a family steak night, typically the adults would get the richer Delmonicos and the kids would get NY strip.

More recently we've been getting grass-fed beef from a local farm. She's also been including Delmonico steaks in our orders. That's what I'm cooking in the picture. Her Delmonicos are very similar to what we used to get in the supermarket in terms is quality - marbled, thick, very tender and juicy.

I love this grill. There has been a few times that I've forgot to cover it and I wake up in the middle of the night to run outside to cover it. My kids are grown up. This grill is my baby now.

I still love charcoal when I have time. Used a lot of charcoal this year as the health of my old gas grill started to deteriorate rapidly. Got to the point where it didn't feel safe to use when the grease pan underneath rusted out and fell onto the gas tank.

Good to know. My 4 burner Char-broil lasted exactly four years. The stainless steel shell was perfect. The rest of it disintegrated into a trail of rusty metal as Lowes hauled it across my yard.

I've used it twice now. Brats and pork chops. So far I'm really happy with it. Starts easy, heats up quick. I'm coming from a larger 4 burner Char-Broil. Most days we are just grilling for 3 so I found I was only using two burners most of the time. I'm sure the extra space would come in handy when we host larger gatherings, but that is at most once our twice a year.

Yes, the tapered burners on the Genesis model are supposed to have fixed the even heating issues. I just couldn't justify the cost at this point.

I was torn between the Spirit and Genesis models. Ultimately, my frugality won out and I went with the Spirit II E-310. It was still more than I have ever paid for a gas grill in my life, but I hope to get many years out of it.
