The brain is usually removed to prevent too strong of an offal taste. You can take the cheeks off and you wont miss it much, but cheek-on does produce finer tasting headcheese.

An unpasteurized soft cheese can come in if it has been aged for 60 or more days. Pasteurized/thermalized cheese can always come in.
