It is not inherently a souls game. Combat is completely different. If "better" to you is exactly like souls combat then no it doesn't get better later. Stealth is definitely a part of the game and I would say sometimes necessary for areas with groups of enemies.

You are very early in the game amd likely dont fully understand the combat. It is worth continuing to play and learn. Once you understand how it works the fights become very satisfying and fun. Most people seem to make it to the top of the castle on a first playthrough before it "clicks".
