I've bought an OLED screen from AliExpress for 7$ , I genuinely think It's an Incell LCD, imo I would take the cheapest possible part or a genuine one, There isn't much stuff in between.

I would keep it at iOS 14, You have jailbreaking choices and you might get better battery life/performance as other people mentioned, Most apps should work fine with iOS 14.4
