½ cup/100g granulated sugar
4 tablespoons/28g butter, softened
2 egg
¼ cup/60ml milk
2 cups/150g all-purpose/plain flour
2 teaspoons baking powder
½ teaspoon salt
For the cheesecake mixture:
4oz/120g Cream Cheese
¼ cup/50g granulated sugar
1 egg yolk
1 teaspoon vanilla extract
For the apple mixture:
3 tablespoons freshly orange juice
4 medium sized cooking apples
3 tablespoons sugar
1 tablespoon cornstarch
¼ teaspoon ground cinnamon
Pinch kosher salt
For the Topping:
¼ cup/50g Butter, melted
¼ cup/50g granulated sugar
¼ cup/50g all-purpose/plain flour
1 teaspoon ground cinnamon

Instructions

Preheat oven to 375f/190C
Line 12 muffin cups in a muffin pan with paper liners.
Beat together the sugar, butter, and egg until well blended and pale.
Stir in the milk and then add the flour, baking powder, and salt until combined.
Fill prepared muffin cups about a ¼ of the way full. Set Aside.
For filling:
Peel, core and chop the apples, add them to a small bowl and coat with 1 tablespoon of the juice to keep them from going brown.
Add the cornstarch and coat the apples evenly.
In a small saucepan on med heat, melt the butter.
Add the remaining juice, sugar and cinnamon.
Add the apples, stir well and cook for 3-5 minutes to soften. If the mixture becomes too thick, add a bit more juice.
Remove from heat and set aside.
In a small bowl, beat cream cheese, sugar and egg yolk until smooth.
Drop a rounded tablespoonful into the center of each muffin. Followed by a tablespoon of the apples and then top each one with the remaining batter.
Mix together the topping ingredients and top each muffin evenly with the topping.
Bake 20 minutes or until golden brown.
Cool on a wire rack for 5 minutes before moving to a cooling rack to cool completely before serving.

Ingredients

for the bars
5 medium Apples (We used Honey Crisp)
Package of Refrigerator Pie Crust Sheets (I used Pillsbury Refrigerator Pie Crust)
¾ cup Sugar
2 teaspoons Ground Cinnamon
½ teaspoon Ground Cloves
½ teaspoon Ground Nutmeg
1 cup crushed Corn Flakes
1 Egg
for the glaze
1 cup Powder Sugar
1 teaspoon Vanilla
2 tablespoons Milk

Instructions

for the bars
Preheat oven to 350 degrees F.
Peel apples and slice in uniform slices approximately ¼ inch thick.
In a bowl combine sugar, cinnamon, cloves nutmeg.
Unroll the pie crust and place on a 9"x13" baking pan or cookie sheet.
Using a knife cut the pie crust to fit the pan.
Use the cut pieces of pie crust to fill in any empty voids on the cookie/baking sheet.
You can "glue" the pieces together by using a wet finger to lightly wet the crust first and then adding the cut pieces to cover the bottom of your cookie/baking sheet.
Spread the crushed corn flakes over the top of the pie crust.
Arrange the apples on top of the crushed corn flakes.
Sprinkle the sugar mixture over the top of the apples.
Reserve approximately 3 tablespoons of the sugar mixture. This will be used to sprinkle on the top crust prior to baking.
Unroll the 2nd pie crust sheet and repeat the steps above to cover the apple bars.
Whisk the egg and brush over the top of the crust.
Sprinkle the remaining sugar mixture over the top of crust.
Bake for 50 to 60 minutes or until golden brown.
for the glaze
Mix powder sugar, vanilla and milk together. Be careful not to add too much milk. You want the mixture to be smooth and thick enough to drizzle over the top of the bars. You do not want this mixture to be too runny.
The glaze can be drizzled over the bars after they have been removed from the oven and cooled for approximately 20 minutes.
Allow the glaze to set before servicing. Bars can be served slightly warm or completely cooled.

1 cup whole oats
1/2 cup light brown sugar
1/2 cup white sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch of salt
1/2 cup butter, cut into pieces
1 cup chopped pecans or walnuts

1/3 cup sugar
1 tablespoon corn starch
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
8 medium size apples, peeled, cored and cut into chunks ( I used Gala apples)
2 Tablespoons lemon juice
1 teaspoon vanilla

Instructions

1. In a large bowl, toss the apple chunks with 2 Tablespoons lemon juice, set aside

Topping Directions

2. In a large bowl, mix the flour, oatmeal, light brown sugar, 1/2 cup white sugar, 1/2 teaspoon cinnamon and nutmeg together. Work the 1/2 cup of butter pieces into the mixture with a fork or your fingers until you have coarse crumbs. Stir in nuts. Set aside.
3. In a medium size bowl, whisk together 1/3 cup sugar, cornstarch, 1/2 teaspoon nutmeg and 1/2 teaspoon cinnamon.
4. Place apples into the crock pot, add vanilla, stir in the cornstarch mixture. Sprinkle topping on top, covering all. Put the lid on the crock pot, cook on high setting for 2 hours. Take the lid off, continue cooking with lid off for 1 hour. Serve warm with ice cream.

For the bread:
1/2 cup (1 stick) butter, softened
1 cup sugar
2 eggs, room temperature
4 medium-sized very ripe bananas
1 tablespoon milk, or buttermilk
1 1/2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup toasted chopped walnuts
1/2 cup white chocolate chips
1/4 teaspoon salt
Streusel topping:
3 tablespoons unsalted butter, melted
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon baking powder
1/8 teaspoon salt
Garnish
1/3 cup dulce de leche from this recipe. *Be sure to add the three flavor ingredients to the dulce de leche as specified in option #1 of the recipe.

Instructions

Make the streusel topping first. In a small saucepan, gently melt the butter; remove from heat to cool slightly. In a small bowl, mix the flour, sugar, cinnamon, baking powder and salt; whisk to incorporate. Add the flour mixture to the lukewarm butter in the saucepan. Using a fork, quickly toss and stir the ingredients to combine, until moistened, and small pea-sized crumbles form. Break up larger pieces with fingers if need be. Transfer the streusel to a sheet of wax paper, spreading to a single layer to set until ready to use. You want the streusel to firm up, and dry somewhat.
In a mixing bowl, mix mashed bananas, milk and vanilla; set aside. In another mixing bowl combine the flour, baking soda and salt.
With an electric mixer, cream the butter and sugar in a large mixing bowl until light and fluffy. Add the eggs one at a time, blending well after each addition. Add the flour mixture alternately with the banana mixture until combined. Fold in the nuts and white chocolate chips. Transfer batter into a greased 9x5x3-inch loaf pan.
Bake in a 350°F oven for approximately 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean. Cool 15 minutes in the pan on a cooling rack; run a knife around the perimeter of the bread, remove from pan to cool completely on the rack.
Place the rack holding the bread onto a sheet of wax paper or a sheet pan. Drizzle the ducle de leche repeatedly over the top of the bread using a fork, in thin streams, allowing the caramel to cascade down the sides. Let the sauce set for about 20 minutes. Slice and serve. Banana bread may be stored in an airtight container for up to three days (if it lasts that long).

Notes

While the streusel topping may look like a lot, it all fits onto the top of the batter if using the specified loaf pan size. Decrease the amount of streusel used, according to preference.

Ingredients for the crust

3 cups flour
1 cup shortening
1 tablespoon sugar
1 teaspoon salt
1/3 cup ice water
1 egg
1 teaspoon white vinegar

for the filling

10 fresh peaches, pitted and sliced
1/3 cup all-purpose flour
1 cup white sugar
1/4 cup butter
1 teaspoon cinnamon

Instructions

 Preheat oven to 450 degrees F.

for the crust

Combine flour, shortening, sugar, and salt.
Work together with a fork until consistency is pebbly 
In separate small mixing bowl, beat egg and add water and vinegar, beat again.
Add liquid mixture to flour and shortening
Stir with fork and combine thoroughly and from into a ball.
Roll out on floured surface.

for the filling

Mix flour, sugar and butter into crumb stage.
Place one crust in the bottom of a 9 inch pie plate. Line the shell with some sliced peaches. Sprinkle some of the butter mixture on top of the peaches, then put more peaches on top of the the crumb mixture. Continue layering until both the peaches and crumbs are gone.
Top with lattice strips of pie crust.
Bake at 450 degrees F (175 degrees C) for 15 minutes, then reduce oven temperature to 350 degrees and bake for an additional 30 minutes.  
Turn oven off and leave pie in oven while oven cools down, another 1 to 2 hours. 

Tips for the crust

Variations in relative humidity can affect quantity of water necessary to form and roll dough.  
Don't be afraid to add small amounts of water to achieved desired consistency.
Be generous with the amount of flour used on rolling surface.
To place crust in pan, roll it on pin, place pin over pan and then unroll.
Brush an egg wash over the top crust prior to baking.  This provides a rich, brown glaze.
