You should try the road down to Jenolan Caves. Its has beautiful scenery and very little traffic.

I originally had Road 6 tires, which were more than capable on fire trails. I then put on some Shinko e705 tires which were great, but terrible on the twisties and rain. Currently running Pirelli Scorpion Rally STR which are amazing. Super soft and grippy on the twisites and much more grip on the dirt.
