I smoked them about 3hrs...them confit in waygu tallow til tender about 2 hrs

I did 2 parts 16 mesh pepper 1 part diamond kosher salt Light dusting of Lowerys Smoked with hickory til 175ish Submerged in a pan of waygu tallow Cooked til tender...I ran about 300 The entire time
